The Bacon

The first step is making the bacon! You can get precooked bacon to make it easier if you’re in a time crunch, but I cooked it myself. In fact, you can save even more time by getting bacon bits. That way, you don’t even have to chop the bacon into pieces. Use 1/2 cup or more depending on what kind you get.
To cook bacon, carefully place the raw stuff in a pan over medium high heat. Use a fork to toss the bacon, making sure everything is on a flat layer so it cooks evenly. Flip the pieces often to cook each side. When the bacon is no longer raw, but not fully crispy yet, switch from the fork to rubber tongs. When the bacon is dark and crispy, but not burnt, place it on a plate with paper towels to absorb the grease.
Chop the bacon into small pieces. Try to make them similar in size to bacon bits, but it’s okay if they’re a bit bigger.
The Bacon Pickle Ranch Filling

To make the filling for the sandwiches, whip an 8 ounce packet of room temperature cream cheese until fluffy. Scrape down the sides with a spatula, and beat again. This is important because you don’t want chunks of unbeaten cream cheese. Add the ranch, beat, scrape down the sides, and beat again.
Chop about 10 pickles to make 1/4 cup of chopped pickles. The brand I use is different from other brands, so you may need more. Make sure to use a paper towel to absorb any excess moisture. Chop a green onion into small pieces and measure out 1/2 cup of finely grated sharp cheddar cheese. You can grate your own cheese. Just make sure to finely grate it.
Fold in all of the toppings with a spatula, including the bacon, pickles, green onions, and cheese. I wouldn’t recommend using a handheld mixer for the toppings because it won’t combine evenly. Time to assemble the sandwiches now!
Assembling the Ritz Sandwiches

To assemble the sandwiches, lay one cracker upside down on a flat surface. I used a cutting board. With a tablespoon sized cookie scooper, scoop the filling onto the cracker. Top it with another cracker that is right side up.
If you want to speed up the process, you can place six crackers upside down and have six top crackers ready. Scoop filling onto each of the six upside down crackers, and then top each one. This allows you to make six at a time, which speeds up the process. I did this.
Serving at a Party
Once all the sandwiches are done, it’s time to serve! I’d recommend serving as soon as possible so that they don’t get soggy. Store leftovers in the refrigerator. Crackers may soften over time, so use the sandwiches quickly. Now that you know how to make them, let’s move on to FAQs!
