Bacon Pickle Ranch Ritz Party Sandwiches

Ingredients
  

  • 6 slices bacon or 1/2 cup bacon bits
  • 8 oz room temperature cream cheese
  • 2 tablespoons ranch
  • 1/4 cup chopped pickles about 10 slices
  • 1/2 cup sharp cheddar cheese finely grated
  • 1 green onion
  • 48 ritz crackers

Instructions
 

  • First, cook the bacon. Chop it into small pieces. You can add 1/2 cup of bacon bits instead. Set this aside.

  • In a mixing bowl, beat the room temperature cream cheese with a handheld mixer. Scrape down the sides with a spatula and beat again. Add ranch, beat, scrape down sides, and beat again.
    8 oz room temperature cream cheese, 2 tablespoons ranch
  • Chop the pickles into small pieces to get 1/4 cup. Use a paper towel to absorb any excess moisture. Chop the green onion too. Fold in the pickles, green onion, bacon, and cheese into the cream cheese mixture.

  • Assemble the sandwiches by placing a cracker upside down. Use a scooper to scoop about one tablespoon of the filling on the cracker. Top it with another cracker. Repeat until all the filling is gone, which should give you 24 sandwiches.

  • After all the sandwiches are made, set them on a board to serve at a party as an appetizer. Though they may get soggy, keep leftovers in the fridge. Enjoy!
