- 1 stick butter
- 1/4 cup sugar
- 3/4 cup dark brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 pinch salt
- 1/2 teaspoon espresso powder
- 1/2 teaspoon baking soda
- 1 1/3 cups flour
- 1 cup chocolate chips
First, preheat the oven to 350 degrees Fahrenheit. Prepare a baking sheet by putting parchment paper on it.
Next, brown the butter in a pan. You‘ll know when it’s ready when the butter is a golden color and bubbles form. Trust me on this: let the butter cool in the fridge for five minutes. While it cools, mix the sugars, egg, salt, vanilla, and espresso powder.
Then, add baking soda, flour, and chocolate chips. Mix until JUST COMBINED. Scoop 1/4 cup dollops onto the baking sheet and press them down.
Finally, bake the cookies in the preheated oven for 10-14 minutes or until the edges are golden and the bottom is brown and crispy (the middle might be gooey straight out of the oven. Golden edges and a brown bottom are indicators that they’re done). Let it cool and enjoy!
