Ingredients
  

  • 1 stick butter
  • 1/4 cup sugar
  • 3/4 cup dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 1/2 teaspoon espresso powder
  • 1/2 teaspoon baking soda
  • 1 1/3 cups flour
  • 1 cup chocolate chips

Instructions
 

  • First, preheat the oven to 350 degrees Fahrenheit. Prepare a baking sheet by putting parchment paper on it.
  • Next, brown the butter in a pan. You‘ll know when it’s ready when the butter is a golden color and bubbles form. Trust me on this: let the butter cool in the fridge for five minutes. While it cools, mix the sugars, egg, salt, vanilla, and espresso powder.
  • Then, add baking soda, flour, and chocolate chips. Mix until JUST COMBINED. Scoop 1/4 cup dollops onto the baking sheet and press them down.
  • Finally, bake the cookies in the preheated oven for 10-14 minutes or until the edges are golden and the bottom is brown and crispy (the middle might be gooey straight out of the oven. Golden edges and a brown bottom are indicators that they’re done). Let it cool and enjoy!
