Welcome to the easiest caramel corn recipe! It’s delicious and surprisingly simple. You don’t even need a candy thermometer! Caramel corn will always be one of my favorite fall foods. It’s the best snack for autumn afternoons. Like many of my recipes, this one has a story as well.
The Story
Have you seen my spiced nut recipe? That spiced nut recipe is great for decoration, and it’s nostalgic. This caramel corn recipe is also a recipe that you can put in one of those pumpkin dishes. My mom also made this recipe for me throughout my childhood. It reminds me of cool, cloudy autumn afternoons, and it’s a very nice fall recipe. Because it’s a nice autumn recipe, I decided to make it yesterday and share it with you! Something funny happened while I was making it recently.
I didn’t have any butter! I did have something else, however. There was some bacon fat. I had 1/2 cup of bacon fat, the exact amount I needed for this recipe. I decided to use that in the caramel instead of butter. After the caramel sauce and popcorn were mixed, I decided to taste-test the bacon-flavored caramel stuck to the pan. It was…interesting. When the caramel corn was done, I wondered if the popcorn would make it any better. I liked it! However, I think that caramel corn with butter is better.
You should definitely use butter or a butter substitute when making this recipe. Coconut oil, bacon fat, and avocado oil will not work! Here are some answers to more questions:
Frequently Asked Questions
Do I have to remove the kernels from the popcorn? Yes. Don’t be lazy. No one wants to accidentally bite into a kernel!
Can I use pre-popped Skinny Pop popcorn? Of course you can! You wouldn’t have to remove any kernels, which saves time and effort.
Can I use regular sugar instead of brown sugar? I would recommend using brown sugar, but you can try adding molasses to regular sugar. I don’t think it would work the same, but you can try. Tell me how it goes in the comments section below!
Here are some things about caramel corn that I found interesting:
- Baking soda is essential for a good caramel texture. When stirred in caramel sauce, it releases carbon dioxide. This makes the caramel smooth.
- This recipe also calls for corn syrup. Have you ever wondered what the difference between light and dark corn syrup is? Dark corn syrup has molasses. It is good for a richer taste. On the other hand, light corn syrup has no molasses. It won’t change the color of desserts. You can use either one, but I prefer dark corn syrup.
- Do you know why popcorn pops? Inside that corn kernel, there’s a bit of water. When you heat it up, the water turns into steam. This causes pressure, and the kernel pops! You’ll also see some unpopped kernels when you make popcorn. These kernels had too much water, too little water, or their shells were cracked, so they didn’t pop.
