Easiest Caramel Corn Recipe

This is the easiest caramel corn recipe. It's delicious and surprisingly simple. You don't even need a candy thermometer! Try it today!

Ingredients
  

  • 18-20 cups popped pop corn I just use two packets of microwave popcorn
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup dark corn syrup you CAN use light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions
 

  • First, line a large, oven-safe pan with parchment paper and pop the popcorn. Pour the popcorn into that pan and then shake the pan. The unpopped kernels should sink to the bottom. Gather the kernels and throw them away.

  • Next, mix the brown sugar, butter, corn syrup, and salt in a greased pan over medium heat. Stir constantly. When the caramel bubbles, add the baking soda. It will make the caramel fizz up a bit. This is what we want! Take the caramel off the heat. Preheat the oven to 200 degrees Fahrenheit.

  • Then, pour the caramel over the popcorn. Mix it until well-distributed. Place the pan into the preheated oven. Finally, bake the caramel corn for one hour, mixing every 15 minutes. After it's done baking, let it cool for a bit. Enjoy!
