Hey, girlies! Read more if you want my favorite pumpkin kale cookie recipe!

Welcome to my Pumpkin Kale Cookie Recipe! This recipe is amazing! It’s perfect for fall baking, especially if you want a more nutritious option. Here’s the story behind these cookies before we start!

The Story Behind This Pumpkin Kale Cookie Recipe

A long time ago, when my brother was four, my mom made this cookie recipe for him all the time. My brother used to not have a very big appetite when he was that age (huge contrast to now. Lol). He just didn’t want the food that was available in the house. Back then, he couldn’t make ramen like he does now because he was four. So, my mom made this cookie recipe for him. He would eat a lot of them because they are so good. He got the nutrients he needed because of this life-changing cookie recipe (ok, that sounds a bit dramatic).

How I Found Out About This Recipe

A few days ago, my mom and I were talking about pumpkin cookies and muffins. I think it was because I posted a personality quiz that included a story about my auntie’s dog eating my brother’s pumpkin muffin. Click here to take the dog personality quiz and to read this funny story! So anyway, my mom told me how this pumpkin cookie recipe was the only thing my brother would eat.

Today, I wanted to bake something nutritious and delicious. My mom told me that I should make this recipe! If it met my brother’s picky standards, I was sure that I would like it. I asked my mom where the recipe was. She said that it was in the red binder. That’s where all of our childhood recipes are. I searched through the binder for the recipe. I found it!

You know a recipe is good when it’s written in cursive, wrinkled, and stained. I read it carefully. You also know that a recipe is good if there are strange words or symbols that you don’t understand. For example, there were these things in the recipe: ” ” “. I discovered what that means. It means that the same measurement is used for the following ingredients. With that in mind, I tried this recipe that hasn’t been made in a long time. It turned out amazing! I think my brother still likes it. My mom and I really liked it!

Add-Ins

The add-ins for this recipe are kale and pumpkin puree. I chopped up the kale because I don’t mind seeing green in my food. However, you may want to put the kale in the food processor. I would add chocolate chips, but my brother ate them all. Maybe he wouldn’t have eaten them if I had made this cookie recipe earlier.
