First, finely chop the kale. If you don't want pieces of kale in your cookies, you can put it in the food processor. Next, in a seperate bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and coconut sugar. Add the coconut oil, pumpkin puree, egg, and vanilla.
