Pumpkin Kale Cookies

This is my pumpkin kale cookie recipe. I hope you enjoy it as much as my brother did when he was four.

Ingredients
  

  • 2 cups chopped kale
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoom salt
  • 3/4 cup coconut sugar
  • 1/2 cup coconut oil
  • 1 can pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla

Instructions
 

  • First, finely chop the kale. If you don't want pieces of kale in your cookies, you can put it in the food processor. Next, in a seperate bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and coconut sugar. Add the coconut oil, pumpkin puree, egg, and vanilla.
    2 cups chopped kale, 2 1/2 cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoom salt, 3/4 cup coconut sugar, 1/2 cup coconut oil, 1 can pumpkin puree, 1 egg, 1 teaspoon vanilla
  • Scoop the cookie batter (it's more like a dough than a batter) onto a cookie sheet with parchment paper. Flatten them a bit. Bake in the oven at 350 degrees Fahrenheitfor 15-18 minutes.
  • Let the cookies cool. Spread butter on them and enjoy!
