- 1/2 cup peanut butter
- 1 1/3 cup oats
- 4 tablespoons coconut oil
- 4 tablespoons cocoa powder
- 1/3 cup maple syrup
- 1/2 teaspoon salt
- 1 teaspoon vanilla
In a mixing bowl, add the peanut butter and oats. Prepare a cookie sheet with parchment paper.
Mix coconut oil, cocoa powder, maple syrup, and salt in a saucepan over medium heat. When it comes to a rolling boil, take it off the heat.
Add vanilla and the chocolate mixture to the mixing bowl with the peanut butter and oats in it. Mix until well-incorporated. Scoop cookie dough into about 12 cookies onto a cookie sheet with parchment paper. Let cool in the freezer until the cookies are firm. Enjoy!
