After looking for fun breakfast cookies on YouTube for a while, I decided to make my own recipe. One morning, I was experimenting in the kitchen. I really just tossed together ingredients one day and then kept on improving the recipe every morning. Finally, I cracked the code to make the cookies fudgy: an egg yolk. I created a fudgy breakfast cookie, which is the first recipe that I’ve ever made myself! After weeks of trial and error, I now have a breakfast chocolate cookie recipe that is easy, quick, and delicious!
The Important Ingredients
Coconut oil actually has a lot that you need to know about. First, never put too much coconut oil. While experimenting with this recipe, I added too much coconut oil. The cookies spread too much and were not fudgy. I experimented again. That time, I put the right amount of coconut oil. The results? Amazing and fudgy! So, never put more coconut oil. Also, you can try using avocado oil or browned butter. Tell me if you do!
I talked a bit about the egg yolk already. It is essential to the cookie! I’ve never tried this recipe with a flax egg, so if you don’t eat egg, tell me how it goes with an egg substitute.
Honey is in most of my breakfast recipes. I prefer adding honey over maple syrup because maple syrup can mess with the texture of the cookie. But, please tell me how using maple syrup goes if you do try it.
The toppings of this breakfast cookie are very important. Whether you add chocolate or not, salt on top of the cookies is highly recommended. Try dusting with cocoa powder or powdered sugar. The possibilities are endless!
How to Make These Breakfast Cookies
Here’s how to make these breakfast cookies!
First, separate the egg yolk from the white. You want the yolk, so set the white aside for meringue or something. Mix the yolk with peanut butter, honey, salt, and vanilla. It should be a smooth batter.
Next, you wanna add cocoa powder and coconut oil. Mix well until combined. It should look like chocolate cake batter. Scoop three equal dollops of batter onto a microwaveable plate. You can top with chocolate chips or not.
Finally, microwave for one minute or until the inside is cooked. I like topping my baked cookies with salt because it makes them look cool and delicious. Let them cool. Cooling them in the fridge for an hour makes them even fudgier. I would eat the same day or overnight. Enjoy!
