How to Make Homemade Butter in a Stand Mixer

Ingredients
- 2 cups heavy whipping cream
- 1/4 teaspoon salt
- Optional: honey, garlic, or anything else you want to mix into the butter

First, pour the heavy whipping cream into the stand mixer with the whisk attachment. Gather a spatula, mesh strainer, a bowl for the buttermilk (yes, you get butter and buttermilk!), another bowl for rinsing the butter, and a paddle attachment for mixing in the salt and optional toppings.

Then, turn the stand mixer on low speed, and then gradually increase the speed to medium. After it starts to thicken, slowly increase the speed. Soon, the heavy whipping cream will become whipped cream! Scrape down the sides of the bowl with the spatula.

Next, increase the speed. The whipped cream will start to turn yellow and lumpy. Lower the speed when you hear splashing. That’s the buttermilk.

Then, strain the buttermilk with the mesh strainer into the bowl. You can make pancakes with the buttermilk. 🙂 You’re welcome! Transfer the butter to the other bowl. Pour ice water into the bowl to prevent the butter from melting, and then squeeze and mix the butter with your hands to rinse it. Empty the water and replace it after squeezing a few times until the water is clear. Next, transfer the rinsed butter back into the stand mixer.

Now’s the fun part: mixing in the salt and optional toppings! Replace the whisk attachment with the paddle. Add a pinch of salt and optional toppings. Mix until combined. I did regular butter and honey butter. Finally, wrap the butter in parchment paper for recipes or spread it in a jar for toast. I think homemade biscuit bread and butter taste so good together.
